Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Butter
  • 1.5 cups Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 stalks Green onions (optional, for garnish)
  • 0.5 cup Breadcrumbs (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the potatoes and cut them into 1-inch cubes.

Step 3

Place the potatoes into a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

Step 4

Add butter, sour cream, garlic powder, onion powder, salt, and black pepper to the potatoes. Mash the mixture until smooth and creamy.

Step 5

Fold in 1.5 cups of shredded cheddar cheese, reserving the remaining 0.5 cup for topping.

Step 6

Transfer the mashed potato mixture to a greased 9x13 inch baking dish, spreading it out evenly.

Step 7

If desired, sprinkle breadcrumbs over the top for an added crunchy texture.

Step 8

Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the potato mixture.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Step 10

Remove from the oven and let it cool slightly. Garnish with chopped green onions, if desired, before serving.
