Ingredients

  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 2 large Garlic cloves, minced
  • 15 oz Canned chili without beans
  • 8 oz Cream cheese, softened
  • 10 oz Rotel tomatoes with green chilies, drained
  • 2 cups Shredded cheddar cheese
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped (optional for garnish)
  • 1 bag Tortilla chips (for serving)

Directions

Step 1

Heat a large skillet over medium-high heat and add the ground beef. Cook until the beef is browned, about 6-8 minutes, breaking it up with a wooden spoon as it cooks.

Step 2

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion is soft and translucent.

Step 3

Drain any excess grease from the skillet, then stir in the canned chili, chili powder, cumin, salt, and black pepper. Mix well and let simmer for 3-4 minutes to allow the flavors to meld.

Step 4

Reduce the heat to low and stir in the softened cream cheese until fully melted and combined with the chili mixture.

Step 5

Add the drained Rotel tomatoes and 1 cup of shredded cheddar cheese to the skillet. Stir until well incorporated and the cheese is melted.

Step 6

Transfer the mixture to a heat-proof serving dish or a small slow cooker set to 'warm' to keep the dip hot.

Step 7

Sprinkle the remaining 1 cup of shredded cheddar cheese over the top and garnish with fresh chopped cilantro, if desired.

Step 8

Serve hot with tortilla chips for dipping. Enjoy!
