Ingredients

  • 1 cup granulated sugar
  • 0.5 cup unsalted butter
  • 0.25 cup light corn syrup
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups pecans or peanuts
  • 1.5 cups semisweet chocolate chips
  • 1 teaspoon vegetable oil

Directions

Step 1

Line two baking sheets with parchment paper or silicone baking mats. Set them aside.

Step 2

In a large saucepan, combine the granulated sugar, unsalted butter, and light corn syrup over medium heat. Stir constantly until the mixture begins to melt and combine.

Step 3

Slowly add the sweetened condensed milk while stirring, and bring the mixture to a boil. Reduce the heat to medium-low and continue stirring until the caramel thickens and turns a rich golden brown, about 10-12 minutes.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract.

Step 5

Working quickly, drop spoonfuls of caramel over small piles of pecans or peanuts (about 2-3 nuts per cluster) onto the prepared baking sheets. Allow the caramel to set and cool completely, about 20 minutes.

Step 6

In a microwave-safe bowl, combine the semisweet chocolate chips and vegetable oil. Microwave the mixture in 20-second intervals, stirring between each, until fully melted and smooth.

Step 7

Using a spoon, drizzle the melted chocolate over the top of each caramel cluster. Optionally, cover the entire cluster with chocolate for a fully enrobed treat.

Step 8

Allow the chocolate to set completely at room temperature or refrigerate the clusters for faster setting, about 15-20 minutes.

Step 9

Once set, carefully remove the clusters from the parchment paper and store them in an airtight container at room temperature or in the refrigerator for up to 1 week.
