  • 500 grams Lamb shoulder
  • 200 grams Greek yogurt
  • 3 tablespoons Ghee or clarified butter
  • 2 medium, finely sliced Onions
  • 5 minced Garlic cloves
  • 1 inch, grated Fresh ginger
  • 2 teaspoons Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Garam masala
  • 2 teaspoons Kashmiri red chili powder
  • 2 Black cardamom pods
  • 4 Green cardamom pods
  • 4 Cloves
  • 1 inch Cinnamon stick
  • 2 Bay leaves
  • 1.5 teaspoons Salt
  • 250 milliliters Water
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Cut the lamb shoulder into bite-sized pieces, trimming off any excess fat.

Step 2

In a large bowl, combine the lamb pieces with yogurt, mixing well to coat. Allow it to marinate for at least 30 minutes or overnight in the refrigerator for better flavor.

Step 3

Heat the ghee in a large, heavy-bottomed pan over medium heat.

Add the sliced onions and sauté until golden brown. This should take about 10 minutes.

Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
