Ingredients

  • 4 large Potatoes (starchy, such as Russet)
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Vegetable oil

Directions

Step 1

Peel the potatoes and place them in a pot of cold water to prevent browning.

Step 2

Bring a medium pot of water to a boil, then add the peeled potatoes. Parboil them for 5 minutes, then drain and allow them to cool completely.

Step 3

Once cooled, grate the potatoes using the largest holes of a box grater. Do not rinse the grated potatoes to retain the starch.

Place the grated potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible.

In a large non-stick skillet, heat 2 tablespoons of butter and 1 tablespoon of vegetable oil over medium heat.

Add the grated potatoes to the skillet, spreading them out evenly to form a flat, even layer. Sprinkle with salt and pepper.

Cook the potatoes for 8-10 minutes, pressing down lightly with a spatula, until the bottom layer is golden and crispy.

Carefully invert the Roesti onto a plate. Add the remaining 2 tablespoons of butter to the skillet, then slide the Roesti back in to cook the other side for another 8-10 minutes, until golden and crispy.

Once both sides are crispy and golden, transfer the Roesti to a serving plate.
