Ingredients

  • 6 large russet potatoes
  • 8 slices bacon
  • 2 cups sharp cheddar cheese
  • 4 stalks green onions
  • 1 cup sour cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 cup milk

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and peel the russet potatoes. Cut them into 1-inch cubes and place them into a large pot of salted water.

Step 3

Bring the water to a boil over high heat and cook the potatoes for 10–15 minutes, or until fork-tender. Drain and set aside.

Step 4

While the potatoes are boiling, cook the bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to drain excess grease, then crumble it into small pieces.

Step 5

In a large mixing bowl, add the drained potatoes, 2 tablespoons of butter, milk, salt, black pepper, and garlic powder. Mash the potatoes together until slightly creamy but still chunky.

Step 6

Stir in 1 cup of sharp cheddar cheese, half of the crumbled bacon, 2 stalks of chopped green onions, and the sour cream. Mix until evenly combined.

Step 7

Transfer the potato mixture into a 9x13-inch baking dish that has been greased or lined with cooking spray.

Step 8

Dot the top of the potatoes with the remaining 2 tablespoons of butter, then sprinkle the remaining 1 cup of cheddar cheese evenly over the dish.

Step 9

Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly.

Step 10

Remove from the oven and sprinkle the remaining crumbled bacon and chopped green onions on top.

Step 11

Let the dish cool for 5 minutes before serving. Enjoy your Rocky Mountain Potatoes!
