Ingredients

  • 6 large Roma tomatoes
  • 1 medium White onion
  • 3 whole Garlic cloves
  • 2 whole Jalapeño peppers
  • 1 pepper Chipotle pepper in adobo sauce
  • 0.25 cup Cilantro
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 0.25 cup BBQ sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your grill or broiler to high heat (450°F).

Step 2

Halve the Roma tomatoes and the white onion. Leave the garlic cloves and jalapeño peppers whole.

Step 3

Lightly brush the tomatoes, onion, garlic, and jalapeños with 1 tablespoon of olive oil to prevent sticking.

Step 4

Place the vegetables on the hot grill or broiler and roast them until they develop a good char, about 5-7 minutes per side. Rotate as necessary to ensure even charring.

Step 5

Once charred, remove the vegetables to cool for a few minutes. Peel the garlic cloves and remove the stems from the jalapeños. For less heat, you can also deseed the jalapeños.

Step 6

In a blender or food processor, combine the grilled tomatoes, onion, garlic, jalapeños, chipotle pepper in adobo sauce, cilantro, lime juice, smoked paprika, cumin, BBQ sauce, salt, and black pepper.

Step 7

Blend until the salsa reaches your desired consistency. For a chunky texture, pulse lightly; for a smoother salsa, blend longer.

Step 8

Taste and adjust the seasoning with additional salt, lime juice, or BBQ sauce as needed.

Step 9

Transfer the salsa to a bowl and let it rest for at least 15 minutes to allow the flavors to meld.

Step 10

Serve with tortilla chips, drizzle over grilled meats, or use as a marinade. Store leftovers in an airtight container in the refrigerator for up to 5 days.
