Ingredients

  • 6 whole radishes
  • 1 medium-sized red onion
  • 1 large cucumber
  • 1 medium-sized kohlrabi
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash all the vegetables thoroughly under running water to remove any dirt or debris.

Step 2

Slice the radishes thinly into rounds using a sharp knife or a mandoline slicer and set them aside in a large mixing bowl.

Step 3

Peel the red onion and slice it into thin rings, adding them to the same bowl.

Step 4

Peel the cucumber if desired, although leaving the peel on adds extra crunch and nutrients. Halve the cucumber lengthwise, scoop out the seeds with a spoon if they are watery, and slice it into half-moon shapes. Add to the bowl.

Step 5

Peel the kohlrabi using a vegetable peeler, then cut it into matchstick-sized pieces (julienne). Add these pieces to the bowl as well.

Step 6

In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and black pepper until emulsified. Taste and adjust seasoning as needed.

Step 7

Pour the dressing over the prepared vegetables and toss gently to combine, ensuring all the ingredients are evenly coated.

Step 8

Chop the fresh parsley finely and sprinkle it over the salad. Toss lightly for even distribution.

Step 9

Let the salad sit for about 5 minutes to allow the flavors to meld together.

Step 10

Serve immediately as a side dish or store in an airtight container in the refrigerator for up to 2 days. Stir again before serving.
