Ingredients

  • 225 grams All-purpose flour
  • 100 grams Cold unsalted butter
  • 75 grams Granulated sugar
  • 100 grams Mixed dried fruit (e.g. raisins, currants, candied peel)
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 2 tablespoons Milk
  • 1 Large egg
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, sift together the flour and baking powder. Add the ground cinnamon and mix well.

Step 3

Cube the cold butter and add it to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.

Stir in the granulated sugar and mixed dried fruit, ensuring they're evenly distributed throughout the mixture.
