Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 large Ripe mangoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 0.25 cup Cilantro
  • 2 tablespoons Lime juice
  • 1 small Jalapeño
  • 1 teaspoon Honey

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

In a small bowl, mix olive oil, garlic powder, paprika, 1 teaspoon of salt, and black pepper to make a marinade.

Step 3

Brush the chicken breasts generously with the marinade and let them rest for 10 minutes while you prepare the salsa.

Step 4

Peel and dice the mangoes into small cubes. Transfer them to a mixing bowl.

Step 5

Dice the red bell pepper and red onion into small pieces, then add them to the bowl with the mangoes.

Step 6

Finely chop the cilantro and jalapeño, removing the seeds from the jalapeño if you prefer less heat. Add these to the salsa mixture.

Step 7

Stir in lime juice, honey, and 0.5 teaspoon of salt into the bowl with the salsa ingredients. Mix well and set aside.

Step 8

Place the chicken breasts on the preheated grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (74°C).

Step 9

While the chicken is grilling, transfer the mango salsa to a saucepan and heat on low for 3-5 minutes, just until warm (do not overcook).

Step 10

Remove the chicken breasts from the grill and let them rest for 5 minutes.

Step 11

Top each grilled chicken breast with a generous spoonful of the warm mango salsa and garnish with extra cilantro if desired.

Step 12

Serve immediately with your favorite side dishes like rice, quinoa, or a fresh green salad.
