Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 0.75 cup dried mixed fruit (e.g., chopped apricots, cranberries, raisins)
  • 0.75 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg, lightly beaten (for egg wash)
  • 2 tablespoons coarse sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the dried mixed fruit until evenly distributed.

Step 5

In a small bowl, mix together the heavy cream and vanilla extract. Pour the wet ingredients into the dry ingredients and gently mix until a dough forms. Be careful not to overwork the dough.

Step 6

Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle. Using a sharp knife, cut the circle into 8 equal wedges.

Step 7

Place the wedges onto the prepared baking sheet, leaving space between each scone.

Step 8

Lightly brush the tops of each scone with the beaten egg and sprinkle with coarse sugar for a sweet, crunchy topping.

Step 9

Bake in the preheated oven for 14–16 minutes, or until the scones are golden brown on top.

Step 10

Remove from the oven and allow the scones to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature with your favorite toppings like clotted cream, butter, or jam.
