Ingredients

  • 1 lb Steak (sirloin or flank)
  • 4 heads Baby bok choy
  • 3 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 2 tsp Sesame oil
  • 1 tbsp Cornstarch
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 tsp Brown sugar
  • 2 tbsp Vegetable oil
  • 0.5 tsp Red chili flakes (optional)
  • 2 stalks Green onions (optional, for garnish)
  • 4 servings Cooked white rice or noodles

Directions

Step 1

Slice the steak against the grain into thin strips about 1/3 inch thick. Set aside.

Step 2

In a small bowl, combine soy sauce, oyster sauce, sesame oil, cornstarch, minced garlic, grated ginger, and brown sugar. Mix thoroughly to create the stir fry sauce and set aside.

Step 3

Trim the ends off the baby bok choy, separate the leaves, and rinse thoroughly under cold water. Pat dry with a clean towel.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Step 5

Add the steak slices to the hot skillet in a single layer. Cook for 2-3 minutes on each side until browned but not fully cooked through. Remove the steak and set aside.

Step 6

Add the remaining 1 tablespoon of vegetable oil to the skillet, followed by the bok choy. Stir fry for 2-3 minutes until it starts to wilt.

Step 7

Return the steak to the skillet and pour the prepared stir fry sauce over the meat and vegetables. Toss well to coat everything evenly.

Step 8

Cook for another 2-3 minutes until the sauce thickens and the steak is cooked through. If desired, add red chili flakes for extra heat.

Step 9

Remove the skillet from heat and garnish with sliced green onions if using.

Step 10

Serve hot over cooked white rice or noodles.
