Ingredients

  • 2.5 cups Tapioca starch
  • 0.5 cups Potato starch
  • 2 tablespoons Sugar
  • 1.5 teaspoons Salt
  • 2 teaspoons Xanthan gum
  • 2 teaspoons Baking powder
  • 3 pieces Egg whites (large)
  • 0.75 cups Water
  • 2 tablespoons Oil (like canola or vegetable oil)
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Sesame seeds, poppy seeds, or other toppings (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.

Step 2

In a large mixing bowl, whisk together the tapioca starch, potato starch, sugar, salt, xanthan gum, and baking powder until well combined.

Step 3

In a separate bowl, lightly beat the egg whites. Add the water, oil, and apple cider vinegar, mixing until blended.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring continuously. The dough will be thick and slightly sticky.

Step 5

Divide the dough into 8 equal portions. Roll each portion into a ball and gently press it down slightly.

Step 6

Using your thumb, poke a hole in the center of each dough ball and lightly shape it into a bagel form.

Step 7

Carefully transfer the bagels onto the prepared baking sheet, spacing them evenly apart.

Step 8

If desired, sprinkle sesame seeds, poppy seeds, or your favorite toppings onto the bagels.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.

Step 10

Remove from the oven and let the bagels cool on a wire rack for at least 15 minutes before serving. Enjoy them plain or with your favorite spreads!
