Ingredients

  • 4 large Russet potatoes
  • 8 cups Cold water
  • 2 tablespoons White vinegar
  • 6 cups Vegetable oil
  • 2 teaspoons Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Grated Parmesan cheese (optional)

Directions

Step 1

Peel the russet potatoes and cut them into evenly-sized batons, roughly 1/4-inch thick.

Step 2

Place the cut potatoes in a large bowl and cover them with cold water. Add 2 tablespoons of white vinegar to the water. Soak the potatoes for at least 30 minutes to remove excess starch, or up to 2 hours for best results.

Step 3

Drain and rinse the potatoes thoroughly after soaking. Pat them completely dry with paper towels or a clean kitchen towel.

Step 4

Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 300°F (150°C).

Step 5

Working in small batches, fry the potatoes for 4–5 minutes until they are soft but have not yet developed color. Remove them from the oil using a slotted spoon or spider strainer and drain on a paper towel-lined baking sheet. Repeat until all the potatoes are blanched.

Step 6

Increase the heat of the oil to 375°F (190°C).

Step 7

Fry the blanched potatoes in batches again for 3–5 minutes until they are golden and crisp. Transfer to a paper towel-lined tray to remove excess oil.

Step 8

In a small bowl, mix the salt, garlic powder, and smoked paprika together.

Immediately toss the hot fries with the seasoning mixture to coat evenly. Garnish with freshly chopped parsley and a sprinkle of grated Parmesan cheese if desired.
