Ingredients

  • 4 sprigs Fresh rosemary sprigs
  • 2 large Egg yolks
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 medium Garlic clove, minced
  • 0.75 cup Extra-virgin olive oil
  • 0.25 cup Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 2 teaspoons Water (optional, for thinning)

Directions

Step 1

Preheat a non-stick or cast iron skillet over medium heat until hot.

Step 2

Lightly char the rosemary sprigs in the dry skillet, turning occasionally, for 2-3 minutes until aromatic and slightly blackened in spots. Set aside to cool.

Step 3

Once cooled, strip the charred leaves from the rosemary stems and finely chop the leaves. Discard the stems.

Step 4

In a medium mixing bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and minced garlic until combined.

Step 5

Slowly drizzle in the olive oil, a few drops at a time to start, while whisking constantly to emulsify. Gradually increase the drizzle to a thin stream as the mixture thickens.
