Ingredients

  • 2 pounds ground beef (80/20 blend preferred)
  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, minced
  • 4 garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 15 ounces tomato sauce
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional for extra heat)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese, for garnish (optional)
  • 0.5 cup sour cream, for garnish (optional)
  • 3 sliced green onions, for garnish (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil.

Step 2

Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5–7 minutes, then drain any excess grease.

Step 3

Add the diced onion, green bell pepper, and jalapeño to the pot. Sauté for 5 minutes until the vegetables are softened.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Stir well to coat the beef and vegetables in the spices.

Step 6

Pour in the crushed tomatoes, tomato sauce, beef broth, kidney beans, and pinto beans. Stir to combine.

Step 7

Season the chili with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 60–75 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning if needed. If the chili is too thick, add a splash of beef broth or water to reach your desired consistency.

Step 9

Ladle the chili into bowls and garnish with shredded cheddar cheese, a dollop of sour cream, and sliced green onions, if desired.
