Preheat your oven to 160°C (320°F). Prepare a deep baking dish large enough to hold a smaller round baking pan or ramekins for a water bath.
To make the caramel, combine 100 grams of sugar and 50 milliliters of water in a small saucepan over medium heat. Stir until the sugar dissolves, then let it simmer until it turns a deep amber color. Be cautious not to burn the caramel.
Carefully pour the hot caramel into a round baking pan (or divide evenly among ramekins), tilting it to coat the bottom evenly. Set aside and let it harden.
In a separate saucepan, heat the milk over medium heat until it is warm but not boiling. Remove from heat and set aside.
In a large mixing bowl, whisk together the eggs and the remaining 100 grams of sugar until pale and creamy. Gradually add the warm milk while whisking constantly to avoid cooking the eggs.
Stir in the vanilla extract, lemon zest, and rose liqueur (or rum) to the custard mixture.
Strain the mixture through a fine-mesh sieve into the caramel-coated baking pan or ramekins to remove any lumps or air bubbles.
Place the baking pan or ramekins into the prepared deep baking dish. Pour hot water into the dish until it reaches halfway up the sides of the pan or ramekins to create a water bath.
Carefully place the dish in the oven and bake for 40-45 minutes, or until the custard is set but still slightly jiggly in the center.
Once cooked, remove the pan or ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 4 hours, or overnight, to firm up.
To serve, run a knife around the edge of the custard to loosen it, invert the pan or ramekins onto a serving plate, and let the caramel sauce cascade over the top.
