Ingredients

  • 3 medium zucchini
  • 2 whole bulbs garlic
  • 3 tablespoons olive oil
  • 1.5 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the zucchini and trim the ends. Cut them in half lengthwise and then into 1-inch chunks.

Step 3

Peel away the loose outer layers of garlic bulbs but keep the bulbs intact. Slice the tops off each bulb to expose the cloves.

Step 4

Place the zucchini chunks and garlic bulbs on a baking sheet lined with parchment paper.

Step 5

Drizzle 2 tablespoons of olive oil over the zucchini and garlic. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Toss the zucchini to coat evenly.

Step 6

Roast the zucchini and garlic in the preheated oven for 35–40 minutes, flipping the zucchini halfway through, until they are golden brown and tender.

Step 7

Remove the tray from the oven and let the zucchini and garlic cool for 5–10 minutes.

Step 8

Squeeze the roasted garlic cloves out of their skins into a food processor. Add the roasted zucchini, remaining olive oil, lemon juice, remaining salt and black pepper, and parsley.

Step 9

Blend the mixture until smooth. Taste and adjust seasoning as needed.

Step 10

Transfer the spread to a bowl and serve warm or chilled with crackers, bread, or fresh vegetables.
