Ingredients

  • 4 medium Carrots
  • 3 medium Parsnips
  • 1 large Sweet potato
  • 1 small Rutabaga
  • 1 medium Red onion
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper (freshly ground)
  • 0.5 cup Apple cider
  • 2 tablespoons Maple syrup
  • 1 teaspoon Fresh thyme leaves
  • 2 cloves Garlic (minced)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Step 2

Peel and trim the carrots, parsnips, sweet potato, and rutabaga. Cut them into evenly sized 1-inch chunks to ensure even roasting.

Step 3

Cut the red onion into wedges, keeping them similar in size to the other vegetables.

Step 4

In a large mixing bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

Step 5

Spread the vegetables out in a single layer on the prepared baking sheet, making sure not to overcrowd them.

Step 6

Roast the vegetables in the oven for 25 minutes, stirring halfway through to ensure even browning.

Step 7

While the vegetables roast, prepare the apple cider glaze. In a small saucepan, combine apple cider, maple syrup, fresh thyme leaves, and minced garlic. Bring the mixture to a simmer over medium heat and cook for 5-7 minutes, or until slightly reduced and syrupy.

Step 8

After the vegetables have roasted for 25 minutes, remove them from the oven and drizzle the apple cider glaze over the top. Use a spatula to toss the vegetables gently in the glaze.

Step 9

Return the baking sheet to the oven and roast for an additional 10 minutes, or until the vegetables are caramelized and tender.

Step 10

Remove the vegetables from the oven and transfer them to a serving dish. Garnish with a sprinkle of extra thyme leaves if desired. Serve warm and enjoy!
