Ingredients

  • 1 cup walnuts
  • 0.5 cup sun-dried tomatoes (oil-packed, drained)
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley (chopped)
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water (if needed)

Directions

Step 1

Preheat a dry skillet over medium heat.

Step 2

Add the walnuts to the skillet and toast them for 3-5 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and let them cool slightly.

Step 3

In a food processor, combine the roasted walnuts, sun-dried tomatoes, garlic, olive oil, lemon juice, parsley, smoked paprika, ground cumin, salt, and black pepper.

Step 4

Blend the mixture on high speed until smooth, scraping down the sides as needed. If the mixture is too thick, add water one tablespoon at a time until the desired consistency is achieved.

Step 5

Taste the dip and adjust seasoning, adding more salt or lemon juice if needed.

Step 6

Transfer the dip to a serving bowl and garnish with an additional drizzle of olive oil and a sprinkle of chopped parsley, if desired.

Step 7

Serve immediately with crackers, bread, or vegetable sticks, or store in an airtight container in the refrigerator for up to 5 days.
