  • 1 large red bell pepper

  • 1 medium yellow onion

  • 0.5 pounds ground pork
  • 0.75 cups breadcrumbs
  • 0.25 cups milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 2 small garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cups balsamic vinegar
  • 2 tablespoons brown sugar
  • 0.25 cups ketchup

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Dice the red bell pepper, zucchini, carrot, and yellow onion into small, even-sized pieces.

Step 3

Toss the diced vegetables with 1 tablespoon of olive oil and spread them out on a baking sheet. Roast in the preheated oven for 20 minutes, stirring halfway, until softened and slightly caramelized.

Remove the roasted vegetables from the oven and allow them to cool slightly. Lower the oven temperature to 375°F (190°C).
