Ingredients

  • 6 count Roma tomatoes
  • 2 count Jalapeño peppers
  • 1 medium White onion
  • 2 count Garlic cloves
  • 0.5 cup Cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.

Step 2

Wash and dry the Roma tomatoes and jalapeños. Place them, along with the unpeeled garlic cloves, on the prepared baking sheet.

Step 3

Peel and quarter the white onion, then add it to the baking sheet.

Step 4

Drizzle everything with olive oil and toss gently to coat.

Step 5

Roast in the preheated oven for 20 minutes, turning the tomatoes, jalapeños, and onion once halfway through for even charring.

Step 6

Remove the tray from the oven and let the vegetables cool slightly.

Step 7

Peel the garlic cloves and remove the stems from the jalapeños. For less heat, you can remove the jalapeño seeds as well.

Step 8

Transfer the roasted vegetables to a blender or food processor. Add the cilantro, lime juice, and salt.

Pulse the mixture until it reaches your desired consistency, whether chunky or smooth. Taste and adjust the seasoning with additional salt or lime juice, if needed.
