Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 1 tablespoon Fresh rosemary, chopped
  • 5 tablespoons Extra virgin olive oil
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice, freshly squeezed
  • 4 slices Garlic bread slices
  • 4 cups Arugula
  • 1 cup Canned white beans, rinsed and drained
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Parmesan cheese, shaved
  • 1 tablespoon Red wine vinegar
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large bowl, combine the shrimp with 2 tablespoons of olive oil, chopped rosemary, 1 minced garlic clove, 0.5 teaspoon of salt, black pepper, and lemon juice. Toss to coat evenly and set aside to marinate while you prepare the rest of the recipe.

Arrange the marinated shrimp on a parchment-lined baking sheet and roast in the preheated oven for 7-10 minutes or until the shrimp are pink, opaque, and slightly curled.
