Ingredients

  • 12 pieces large button mushrooms
  • 2 pieces roasted red peppers
  • 120 grams cream cheese
  • 40 grams Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 30 grams breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

2. Clean the mushrooms with a damp paper towel, remove the stems, and set the caps aside. Finely chop the stems.

3. Dice the roasted red peppers into small pieces and set them aside.

4. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and cook for 3–4 minutes until softened.
