Ingredients

  • 4 large caps Portabella mushrooms
  • 2 whole Roasted red peppers
  • 2 cloves Garlic
  • 1 cup Breadcrumbs
  • 0.33 cup Parmesan cheese
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Balsamic vinegar

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Gently clean the portabella mushrooms with a damp paper towel to remove any dirt. Remove the stems and use a spoon to scrape out the gills to create a cavity for the filling. Set the mushrooms aside.
