Ingredients

  • 2 pounds Yukon gold potatoes
  • 3 tablespoons Olive oil
  • 2 whole Garlic bulbs
  • 1 whole Lemon
  • 2 tablespoons Fresh oregano leaves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Wash the Yukon gold potatoes thoroughly and cut them into bite-sized pieces, roughly 1 inch in size.

Peel off any loose layers from the garlic bulbs, but keep them whole. Slice the tops off the garlic bulbs to expose the cloves.

Zest the lemon and set the zest aside. Cut the lemon into slices.
