Ingredients

  • 4 large caps Portabella mushrooms
  • 3 tablespoons Olive oil
  • 2 minced Garlic cloves
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups, crumbled Blue cheese
  • 1 tablespoon, chopped (optional garnish) Fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Clean the portabella mushroom caps by gently wiping them with a damp paper towel. Remove the stems and, if desired, the gills by scraping gently with a spoon.

Step 3

In a small bowl, mix the olive oil, minced garlic, balsamic vinegar, fresh thyme, salt, and black pepper to create the marinade.

Step 4

Brush the marinade generously over the mushroom caps, coating both sides. Place the mushrooms gill-side up on the prepared baking sheet.

Step 5

Roast the mushrooms in the preheated oven for 20 minutes, flipping them halfway through cooking to ensure even roasting.

Step 6

Remove the mushrooms from the oven and carefully sprinkle the crumbled blue cheese evenly over the gill side of each cap.

Step 7

Place the mushrooms back in the oven for an additional 5 minutes, or until the blue cheese melts and becomes slightly golden.

Step 8

Remove from the oven and allow the mushrooms to cool slightly. Garnish with chopped parsley if desired.

Step 9

Serve warm as a side dish or pair with a crisp salad for a light and satisfying main course.
