Ingredients

  • 2 whole Poblano peppers
  • 1 cup Fresh cilantro
  • 2 whole Garlic cloves
  • 2 tablespoons Lime juice
  • 0.5 cup Sour cream
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground cumin
  • 2 tablespoons Water (if needed)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the whole poblano peppers on a baking sheet lined with parchment paper or foil.

Step 3

Roast the peppers in the oven for 10-15 minutes, turning halfway through, until the skin is charred and blistered.

Step 4

Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap or a plate to allow the peppers to steam for 10 minutes. This will make the skins easier to remove.

Step 5

Peel off the charred skin from the poblano peppers and discard the stems and seeds. Set the roasted peppers aside.

Step 6

In a blender or food processor, combine the roasted poblano peppers, fresh cilantro, garlic cloves, lime juice, sour cream, olive oil, salt, and ground cumin.

Blend until smooth. If the sauce is too thick, add water one tablespoon at a time until the desired consistency is achieved.
