Ingredients

  • 1 whole Fresh pineapple
  • 120 ml Balsamic vinegar
  • 2 tbsp Honey
  • 150 g Fresh goat cheese
  • 1 tbsp Olive oil
  • 1 pinch Salt
  • 5 leaves Fresh mint leaves

Directions

Step 1

Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.

Prepare the pineapple by removing the top, bottom, and peel. Slice the pineapple into 1-inch thick rings and remove the core from each ring.

Brush each pineapple ring lightly with olive oil and place them on the prepared baking sheet. Sprinkle a pinch of salt over the rings to enhance their natural sweetness.
