Ingredients

  • 1 large Red bell pepper
  • 1 cup Silken tofu
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 small Garlic clove
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the red bell pepper on a baking sheet and roast it for 20 minutes, turning it halfway through, until the skin is charred and blistered.

Step 3

Remove the pepper from the oven and transfer it to a bowl. Cover it with a plate or plastic wrap and let it steam for 10 minutes.

Step 4

Peel off the charred skin of the roasted pepper, remove the seeds and stem, and roughly chop the flesh.

Step 5

In a blender or food processor, combine the roasted red pepper, silken tofu, olive oil, lemon juice, garlic clove, Dijon mustard, salt, and black pepper.

Step 6

Blend the ingredients on high speed until smooth and creamy. Taste and adjust seasoning if necessary.

Step 7

Transfer the tofu mayonnaise to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
