Ingredients

  • 3 medium (about 1 lb) yellow onions
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cups chicken or vegetable stock
  • 1 teaspoon fresh thyme
  • 2 teaspoons worcestershire sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup white wine (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and slice the yellow onions into thick wedges.

Step 3

Place the onions on a baking sheet and drizzle with 2 tablespoons of olive oil. Toss to coat, then spread the onions out in an even layer.

Step 4

Roast the onions in the preheated oven for 25–30 minutes, stirring halfway through, until they are soft and caramelized. Set aside.

Step 5

In a medium saucepan or skillet, melt the butter over medium heat.

Step 6

Add the all-purpose flour to the melted butter and whisk constantly for 2–3 minutes to form a roux. The mixture should turn golden and smell nutty.

Step 7

Gradually pour in the chicken or vegetable stock, whisking constantly to avoid lumps. (If using white wine, add it here.)

Step 8

Stir in the roasted onions, fresh thyme, worcestershire sauce, salt, and black pepper.

Step 9

Bring the mixture to a gentle simmer. Use an immersion blender to puree the gravy until smooth, or transfer it to a blender and blend carefully.

Step 10

Simmer for an additional 5–10 minutes, stirring occasionally, to allow the flavors to meld and the gravy to thicken.

Step 11

Taste and adjust seasoning with more salt or pepper if needed.

Step 12

Serve the roasted onion gravy warm over your favorite dishes.
