Ingredients

  • 4 nectarines
  • 250 ml red wine
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 1 cinnamon stick
  • 1 star anise
  • 3 cloves
  • 50 grams granulated sugar
  • 2 tablespoons honey
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 4 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and halve the nectarines, removing the pits.

Step 3

Place the nectarine halves, cut side up, in a baking dish. Drizzle with honey and dot with small pieces of butter.

Step 4

Roast the nectarines in the preheated oven for 20 minutes, or until tender and slightly caramelized.

Step 5

While the nectarines are roasting, prepare the mulled wine sauce. In a medium saucepan, combine red wine, orange zest, orange juice, cinnamon stick, star anise, cloves, and granulated sugar.

Step 6

Heat the mixture over medium heat, stirring to dissolve the sugar. Once dissolved, simmer gently for 10 minutes to allow the spices to infuse.

Step 7

Strain the mulled wine mixture through a fine sieve to remove the spices and return the sauce to the saucepan.

Step 8

Simmer the strained sauce for another 5 minutes, or until slightly reduced and syrupy. Stir in the vanilla extract and keep warm.

Step 9

Remove the roasted nectarines from the oven. Place two nectarine halves on each serving plate.

Step 10

Drizzle the warm mulled wine sauce over the roasted nectarines.

Step 11

Garnish with fresh mint leaves, if desired, and serve immediately.
