Ingredients

  • 4 medium zucchini
  • 2 tablespoons extra-virgin olive oil
  • 1 lemon
  • 3 tablespoons pine nuts
  • 2 cloves garlic
  • 2 tablespoons fresh parsley

  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Wash and dry the zucchinis. Cut off the ends, then slice them into thin rounds, about 1/4-inch thick.

Mince the garlic cloves and finely chop the fresh parsley. Set them aside.
