Ingredients

  • 2 lbs lamb loin
  • 6 pieces garlic cloves
  • 4 sprigs fresh thyme
  • 2 tbsp olive oil
  • 1 tsp coarse salt
  • 1 tsp black pepper
  • 2 tbsp unsalted butter
  • 1 tsp lemon zest
  • 1 cup white wine

Directions

Step 1

Preheat your oven to 400°F (200°C).

Trim any excess fat from the lamb loin and pat it dry with a paper towel.

Use a sharp knife to make small slits all over the lamb loin. Insert a garlic sliver and a small sprig of thyme into each slit.

Rub the lamb loin all over with olive oil, then season evenly with coarse salt, black pepper, and lemon zest.
