Ingredients

  • 450 grams fresh green beans
  • 1 medium red onion
  • 60 grams walnuts
  • 2 tablespoons olive oil
  • 1 teaspoons kosher salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons garlic powder
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a large baking sheet with parchment paper or aluminum foil.

Step 2

Trim the stems off the green beans and rinse them under cold water. Pat them dry with a clean kitchen towel.

Step 3

Peel and slice the red onion into thin wedges.

Step 4

In a large bowl, combine the green beans and red onion slices. Drizzle with 2 tablespoons of olive oil, then sprinkle the kosher salt, black pepper, and garlic powder on top. Toss everything together until evenly coated.

Step 5

Spread the green bean mixture in a single layer on the prepared baking sheet.

Step 6

Roast in the preheated oven for 15 minutes, stirring halfway through to ensure even cooking.

Step 7

After 15 minutes, sprinkle the walnuts over the green beans and onions. Return the baking sheet to the oven and roast for an additional 5 minutes, or until the green beans are tender and the walnuts are lightly toasted.

Step 8

Remove the baking sheet from the oven and drizzle the roasted vegetables and walnuts with fresh lemon juice.

Step 9

Transfer to a serving platter and enjoy warm as a side dish.
