Ingredients

  • 2 pounds sweet potatoes
  • 1 garlic bulb
  • 2 teaspoons olive oil
  • 3 tablespoons unsalted butter
  • 0.25 cup milk (or heavy cream)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon fresh parsley (optional, chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes for even cooking.

Step 3

Place the sweet potato cubes in a large pot of salted water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

While the sweet potatoes are boiling, prepare the roasted garlic. Slice the top off the garlic bulb to expose the cloves slightly.
