Ingredients

  • 1 Garlic bulb
  • 400 grams Canned white beans (e.g., cannellini or great northern beans), drained and rinsed
  • 50 grams Sun-dried tomatoes (packed in oil), drained and chopped
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 tablespoon Tahini
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 tablespoons Water (optional for thinning)
  • 1 tablespoon Fresh parsley or basil (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut off the top of the garlic bulb to expose the cloves. Drizzle with 1 teaspoon of olive oil and wrap it tightly in aluminum foil.

Step 3

Roast the garlic bulb in the preheated oven for 30–35 minutes, or until the cloves are soft and golden brown. Let it cool for 5–10 minutes.

Squeeze the roasted garlic cloves out of their skins and set them aside.

In a food processor, combine the roasted garlic, white beans, sun-dried tomatoes, olive oil, lemon juice, tahini, salt, and black pepper.

Blend the mixture until smooth and creamy. If the dip is too thick, add water 1 tablespoon at a time until the desired consistency is achieved.

Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed.
