Ingredients

  • 2 sheets Puff pastry sheets
  • 4 cups Fresh spinach leaves
  • 6 Garlic cloves
  • 2 tablespoons Olive oil
  • 4 ounces Cream cheese, softened
  • 1 cup Parmesan cheese, grated
  • 1 Egg
  • 1 tablespoon Water
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 tablespoons All-purpose flour (for rolling)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Place the garlic cloves on a small piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap tightly to form a pouch. Roast in the oven for 20 minutes until soft and fragrant. Remove from the oven and let cool.

Step 3

While the garlic roasts, heat a large skillet over medium heat. Add 1 tablespoon of olive oil and the spinach. Cook for 2-3 minutes or until wilted. Remove from heat and let cool. Once cooled, squeeze out excess moisture and chop finely.

In a medium bowl, combine the roasted garlic (squeezed out of its skins), cream cheese, Parmesan cheese, spinach, salt, and pepper. Mix until well combined.

In a small bowl, whisk together the egg and water to make an egg wash.

Remove the logs from the freezer and slice each into 1/2-inch-thick spirals. Place the spirals on the prepared baking sheet, leaving 1 inch of space between each.

Brush the tops of the spirals with the egg wash.

Bake in the preheated oven for 18-20 minutes, or until golden brown and puffed.
