Ingredients

  • 2 pounds Baby Yukon Gold potatoes
  • 8 units Garlic cloves
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 0.25 cups Heavy cream
  • 2 tablespoons Fresh parsley, chopped
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the tips off the garlic cloves but leave the skins on. Place the cloves on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap them into a small foil packet.

Step 3

Place the garlic packet in the oven and roast for 25-30 minutes, or until the garlic is soft and fragrant.

Step 4

Meanwhile, wash the baby potatoes and place them in a large pot. Cover with cold water and add 1 teaspoon of salt.

Step 5

Bring the pot to a boil over medium-high heat. Reduce the heat to medium and let the potatoes simmer for 15-20 minutes or until fork-tender.

Step 6

Drain the potatoes and return them to the pot to allow excess moisture to steam off for 1-2 minutes.

Step 7

Carefully squeeze the roasted garlic out of their skins into the pot with the potatoes.

Add the remaining 1 tablespoon of olive oil, butter, heavy cream, 0.5 teaspoons of salt, and black pepper to the pot.

Step 9

Using a potato masher or large fork, smash the potatoes and garlic together until well-combined and slightly chunky. Adjust seasoning to taste.

Step 10

Stir in the chopped parsley and serve warm. Garnish with additional parsley, if desired.
