  • 2 pieces Cornish game hens
  • 6 cloves Garlic cloves
  • 4 sprigs Fresh rosemary
  • 3 tablespoons Olive oil
  • 1 piece Lemon
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Unsalted butter
  • 0.5 cups Chicken broth
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the Cornish game hens under cold water and pat them dry with paper towels. Remove any giblets from the cavities if present.

Step 3

Mince 3 garlic cloves and mix them with 2 tablespoons olive oil, 1 teaspoon salt, and 1 teaspoon black pepper to form a paste.

Step 4

Gently loosen the skin of the hens by sliding your fingers under it. Rub the garlic paste under the skin and over the entire surface of each hen.

Cut the lemon into quarters. Place 2 lemon wedges and 1 whole garlic clove inside the cavity of each hen, along with 1 sprig of rosemary.
