Ingredients

  • 2 whole garlic bulbs
  • 1 cup extra virgin olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 sprig fresh rosemary (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the garlic bulbs to expose the cloves slightly. Place the bulbs on a sheet of aluminum foil.

Step 3

Drizzle a small amount of the olive oil (about 1 tablespoon per bulb) over the garlic, and sprinkle with a pinch of salt and pepper.

Step 4

Wrap the aluminum foil around the garlic bulbs to form a sealed packet and place it on a baking sheet.

Step 5

Roast the garlic in the preheated oven for 30-35 minutes, until the cloves are soft and golden brown.

Step 6

Remove the roasted garlic from the oven and allow it to cool until safe to handle.

Step 7

Squeeze the softened garlic cloves out of their skins into a small bowl and mash with a fork to form a paste.

Step 8

In a small saucepan, combine the remaining olive oil, mashed roasted garlic, the rosemary sprig (if using), and any additional salt and pepper to taste.

Step 9

Heat the mixture over low heat for 5-7 minutes, stirring occasionally, until the oil is fragrant but not boiling.

Step 10

Remove the saucepan from heat and let the oil cool completely to room temperature.

Step 11

Strain the oil through a fine mesh strainer or cheesecloth into a clean, airtight glass bottle or jar, discarding the solids.

Step 12

Store the roasted garlic oil in the refrigerator for up to two weeks. Bring to room temperature before using as the oil may solidify when chilled.
