  • 4 large sweet potatoes
  • 1 whole garlic bulb

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Peel the sweet potatoes and cut them into large chunks, roughly 2 inches in size. Set aside.

Slice the top off the garlic bulb, exposing the tops of the cloves. Drizzle 1 tablespoon of olive oil over the garlic and wrap it tightly in aluminum foil.

Place the garlic package onto a baking sheet and roast in the preheated oven for 35-40 minutes, or until the cloves are golden brown and tender.
