Preheat your oven to 400°F (200°C).
Cut the top off the garlic bulb to expose the cloves and drizzle 1 tablespoon of olive oil over the top. Wrap the garlic in aluminum foil and roast in the oven for 30-35 minutes, until the cloves are soft and golden.
While the garlic is roasting, peel and chop the potatoes into even-sized chunks. Place them in a large pot and cover with cold salted water.
Bring the pot of potatoes to a boil, then reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
