Ingredients

  • 2.5 pounds Russet potatoes
  • 1 Garlic bulb
  • 6 tablespoons Unsalted butter
  • 0.75 cups Heavy cream
  • 0.25 cups Whole milk
  • 2 teaspoons Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 1 teaspoons Extra virgin olive oil
  • 2 tablespoons Fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Remove the flaky outer layers of the garlic bulb. Cut about 1/4 inch off the top to expose the cloves.

Step 3

Place the garlic bulb on a square of aluminum foil. Drizzle with olive oil and wrap it tightly. Roast in the oven for 35-40 minutes, or until the cloves are soft and golden brown.

Step 4

While the garlic is roasting, peel the potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.
