Preheat your oven to 400°F (200°C).
Remove the flaky outer layers of the garlic bulb. Cut about 1/4 inch off the top to expose the cloves.
Place the garlic bulb on a square of aluminum foil. Drizzle with olive oil and wrap it tightly. Roast in the oven for 35-40 minutes, or until the cloves are soft and golden brown.
While the garlic is roasting, peel the potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.
Bring the pot to a boil over medium-high heat. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Mix in the roasted garlic paste, 1 teaspoon of salt, and black pepper. Taste and adjust seasoning if needed.
