Ingredients

  • 1 head Cauliflower florets
  • 1 whole bulb Garlic
  • 2 teaspoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Heavy cream
  • 2 tablespoons Grated Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut off the top of the garlic bulb, exposing the cloves inside. Drizzle with 1 teaspoon of olive oil, wrap it in aluminum foil, and roast in the oven for 30 minutes or until the cloves are golden and soft.

Step 3

While the garlic is roasting, cut the cauliflower into even-sized florets. Place the florets in a large pot of boiling salted water and cook for 10-12 minutes or until tender.

Step 4

Drain the cauliflower well and pat dry with a clean kitchen towel to remove excess moisture.

Step 5

Once the roasted garlic is ready, squeeze the soft cloves out of their skins and set aside.

Step 6

In a food processor or blender, combine the cooked cauliflower, roasted garlic, butter, heavy cream, Parmesan cheese, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.

Step 7

If the mixture is too thick, add an extra tablespoon of heavy cream and blend again.

Step 8

Transfer the mashed cauliflower to a serving bowl. Garnish with chopped fresh chives, if desired.

Step 9

Serve warm and enjoy this comforting, low-carb side dish!
