  • 0.5 teaspoon Black pepper
  • 1 medium Lemon
  • 2 medium Zucchini
  • 2 medium (any color) Bell peppers
  • 1 medium Red onion

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Finely mince 4 cloves of garlic, and leave the remaining 4 cloves whole.

Step 3

In a small bowl, mix the olive oil, minced garlic, fresh thyme, fresh rosemary, salt, and black pepper. Set aside.

Slice the zucchini, bell peppers, and red onion into thin strips or bite-sized pieces.

Cut the lemon into thin slices.

Lay out 4 large sheets of aluminum foil, about 12x12 inches each.
