  • 8 pieces Roma tomatoes
  • 1 whole Garlic bulb
  • 1 medium Yellow onion

  • 4 cups Vegetable broth
  • 0.5 cups Heavy cream
  • 10 leaves Fresh basil leaves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Slice the Roma tomatoes in half and arrange them cut-side up on a baking sheet lined with parchment paper.

Slice the top off the garlic bulb to expose the cloves. Drizzle 1 tablespoon of olive oil over the garlic bulb and wrap it in aluminum foil.

Peel and quarter the yellow onion, placing the pieces on the baking sheet alongside the tomatoes.
