Ingredients

  • 1 Garlic bulb
  • 6 tablespoons Olive oil
  • 4 pieces Sun-dried tomatoes (packed in oil)
  • 3 tablespoons Red wine vinegar
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Dried oregano
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven for 30 minutes or until the garlic is soft and golden.

Step 3

Let the roasted garlic cool slightly, then squeeze the cloves out into a blender or food processor.

Step 4

Add the sun-dried tomatoes, red wine vinegar, lemon juice, Dijon mustard, dried oregano, honey, salt, and black pepper to the blender.

Step 5

Pour the remaining 5 tablespoons of olive oil and the 2 tablespoons of water into the blender.

Step 6

Blend until smooth and creamy. If the dressing is too thick, add a bit more water, one teaspoon at a time, until you reach your desired consistency.

Step 7

Taste and adjust seasoning as needed.

Step 8

Store the dressing in an airtight container in the refrigerator for up to 5 days.
