Ingredients

  • 6 whole garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 1 cup uncooked couscous
  • 1.25 cups vegetable broth (or chicken broth)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons parsley, chopped (optional for garnish)
  • 0.5 teaspoons lemon zest (optional for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel the outer papery layers from the garlic cloves, leaving the skins intact. Place the unpeeled garlic cloves on a small piece of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap the foil tightly around the garlic to create a small packet.

Step 3

Roast the garlic packet in the preheated oven for 20 minutes, or until the garlic is softened and lightly caramelized. Once roasted, set it aside to cool slightly.

Step 4

While the garlic roasts, bring the vegetable (or chicken) broth to a gentle boil in a medium-sized saucepan. Add the salt and 2 tablespoons of olive oil to the broth.

Remove the saucepan from heat and stir in the couscous. Cover with a lid and let it sit undisturbed for 5 minutes to allow the couscous to absorb the liquid.
