Ingredients

  • 1 ball (approximately 10-12 inches in diameter) Pizza dough
  • 3 tablespoons Olive oil
  • 1 Garlic bulb
  • 2 cups Mushrooms (cremini or baby bella)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Cornmeal

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut off the top of the garlic bulb to expose the cloves. Drizzle 1 tablespoon of olive oil over the bulb and wrap it in aluminum foil. Roast in the oven for 25-30 minutes until the cloves are soft and caramelized. Remove and let cool.

Step 3

While the garlic is roasting, clean and slice the mushrooms. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the mushrooms, salt, and black pepper. Sauté until the mushrooms are golden brown and their liquid has evaporated, about 5-7 minutes. Set aside.

Step 4

Increase the oven temperature to 475°F (245°C) and place a pizza stone or baking sheet inside to preheat for 10 minutes.

On a lightly floured surface, roll out the pizza dough into a 10-12 inch circle. Sprinkle the cornmeal onto a piece of parchment paper and place the dough on top. This will help prevent sticking during baking.

Carefully transfer the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven and let it cool for 2-3 minutes. Garnish with fresh thyme leaves and chopped parsley.
